I've had this meal for Christmas/Easter for my family for so many years-HELP!!!  Around 11a.m.

cheese strata/ quiche/  breakfast meats/ fruit salad/stuffed cherry tomatoes/  ice cream sundae bar

Bacon (make ahead, in the oven, and warm up just prior to serving)
Large bowl of cheesy scrambled eggs

Chicken ala King over Pepperidge Farm Pastry Shells (make the chicken ala king ahead fo time and warm up while the pastry shells are baking)
Mixed fresh fruit - make ahead and have ready to pull out of the fridge and set on the table
Assorted coffeecakes, muffins, donut holes.

Orange juice/Mimosas
Milk
Coffee
Tea

oh my.......this reminds me of years ago......my mom made this for dinner so often and i loved it!

 

 

we make a hot chicken casserole that can be made the day ahead and just heated up in the oven the day you want to serve it.

if it is a brunch then why not consider tuna salad, chicken salad, egg salad? the hash brown casserole is also delicious and can be made a day or two ahead.

assorted croissants, bagels, sourdough bread, muffins, mini danish so they dont get wasted.

when i do eggs i always do scrambled for a large crowd.......half with cheese, half without. i do the bacon in the oven (or it can be done the day ahead and then microwaved). sausages are also a good choice.

a fruit salad is a must!

i also serve butter, assorted jams/jellies, clotted cream, cream cheese honey, and sometimes a small cheese display.

smoked salmon with cream cheese, capers, red onion is easy.

if you have a small waffle maker you can set up a waffle station where everyone can make their own......you make the batter and just sit it in a bowl on the side.

When I make a holiday brunch I always make quiche - smoked salmon and another kind, platter of candied bacon, platter of toast, large glass bowl of cut up fresh fruit with some lime juice squeezed on top.  A platter of aspargus would be a nice addition to an Easter brunch.

Do a couple of overnight stratas you prepare the night before.  Make one different than the other so people can sample.

 

Lots of fresh fruit and pastries, champagne or champagne punch.

 

If you need easy, you can always order a Honey Baked ham to heat and serve, also.

 

Maybe roast some asparagus with lemon.

 

And how about one of those fruit fluff salads?  You know, Jello, mini marshmallows and fruit?  There are a lot of recipes online for those.  You can add in grapes and Mandarin orange segments.

Since you've been doing this many years, you must know that anything you can do ahead of time is a winner!  Upside down French toast, so many do-ahead egg casseroles to choose from, pulled pork or chicken in the crock pot, fruit platter with dip.  I've found that people don't really eat the pastries and bagels, but they go for the banana bread.  I'm so not a morning person, so to have 20 people descending on me at 10:00 a.m., you better believe I'd rather stay up until 2:00 a.m. to get it all ready!

I've done brunches for holidays and honestly, sometimes they're more work than a regular holiday meal...I think I was trying to hard to have variety and it ended up being too much variety!!

Now when I do brunches, I just try to keep it simple...I have foods most everyone likes and I buy some things to fill in so I don't have to prepare everything!

My last brunch was for New Years and consisted of this:

A spiral sliced ham

Two 13 by 9 dishes of scrambled eggs; one plain and one with cheddar cheese

cinnamon raisin toast and english muffins

home fried potatoes 

a big fruit salad made a day ahead

bacon and/or sausage

a platter of mini danish and coffee cakes slices (all bought from Wegman's)

orange juice, tea and coffee and a pitcher of mimosas (added champagne when everyone arrived.

I found that everything could be made ahead; the homefries kept in the oven on warm along with the bacon and sausage.  The ham was heated and wrapped in foil on the counter...I prefer it at room temp. anyway.   The only thing I did at the last minute was scramble the eggs and make the toast/english muffins.

Thank you,everyone-you are a wonderful source to go to!  Also,I had misspelled "breakfast" and no one mentioned it-how kindSmiley Happy
