Just made this and it is so good served warm.

Batter:

1 1/4 cup all purpose flour

1 cup sugar

1 1/2 t. baking powder

1/2 t. salt

3/4 cup milk

1/3 cup shortening

1 egg

1 t. vanilla

Measure all ingridients into a large mixing bowl. Beat 3 minutes on high speed and set aside.

Preheat oven to 350.

In a 9" deep dish pie plate, melt 1/4 cup butter or margarine. Sprinkle 1/2 cup brown sugar evenly over the melted butter. Place one pineapple ring in center. Then cut 2 more rings in half. Arrange halves around center ring in a pinwheel fashion. I usually cut another ring into pieces and cover the whole top. Cut maraschino cherries in half and place inside pineapple rings.

Spoon batter on top and spread evenly. Bake 40 - 45 minutes.

Invert onto a plate. Leave pie plate over cake for a few minutes to allow all of topping to come loose before taking pie plate away.

P. S. This batter is also good as a little one layer cake with chocolate frosting.
