This recipe originated before the concern about using fresh raw eggs; eggbeaters can be substituted. This is another easy refrigerator dessert, easy and delicious!
Pineapple Dessert
1/2 lb vanilla wafers
3 T melted butter
1/2 t vanilla
1-1/2 c crushed pineapple
1/8 t salt
1-1/2 c macadamia nuts, chopped, or walnuts or pecans
1/2 c butter
2 c powdered sugar
3 eggs, equivalent eggbeaters to be safe
1/2 pint whipping cream
1 T sugar
1/2 c butter
2 c powdered sugar
3 eggs, equivalent eggbeaters to be safe
1/2 pint whipping cream
1 T sugar
Crush vanilla wafers and mix with 3 tablespoons butter, reserving 1/4 c crumbs. Press into 9 x 12 pan.
Cream butter and powdered sugar together; add beaten eggs and vanilla. Spread over crumbs. Sprinkle nuts and pineapple over second layer. Beat cream, add vanilla, sugar and salt. Spread over pineapple-nut mixture layer. Top with remaining crumbs. Chill for at least one hour. Serves 8.
