A nice Easter Dessert

1 pkg. Yellow (pudding in mix) cake mix
½ cup Cream of Coconut
½ cup pineapple juice
4 eggs
½ - ¾ cup Crushed pineapple (drained)
1/3 cup oil
Put everything in a bowl except the crushed pineapple. Blend until well mixed then add the pineapple and fold it in. Place in any shape pan, 9x13, bundt, angle food, etc. that has been well sprayed and floured. Bake at 350 degrees for 40-50 minutes.

I bake it in a bundt pan. When removed from the pan turn it down on a cake plate. Cool. Fill the hole in the middle of the cake with whipped cream and then put strawberries and sliced kiwi on top of the cream.
