In case you are still looking for a new cookie to have on your plate this year, here is a good recipe. It was demonstrated on our local tv show the other day. It is easy to make and uses ingredients I have on hand, except for the heavy cream.
Pecan Pie Cookies
1-1/2 cups brown sugar, divided
3/4 cup butter, softened
1 egg
2 tsp. vanilla extract, divided
2 cups flour
1 tsp. baking powder
1 cup finely chopped pecans
1/4 cup heavy whipping cream
1.) Preheat oven to 350*
2.) In a large bowl, cream 1 cup brown sugar with butter. Add egg and 1 tsp. vanilla. Combine flour and baking powder and add to sugar mixture.
3.) Shape dough into 1-1/4" balls. Place 2" apart on ungreased cookie sheets. Make an indentation into the cookie with your thumb. Make it fairly deep so the filling will stay in.
4.) Combine 1/2 cup brown sugar, 1 tsp. vanilla extract, pecans and heavy cream. Fill each cookie's indentation with 1 tsp. of the pecan mixture.
5.) Bake for 8 minutes at 350*.
6.) Remove to wire rack to cool completely.
