PECAN CHICKEN
(Source: The Best of Country Cooking 2001)

1/3 c. finely chopped pecans
1/3 c. dry plain bread crumbs
1/2 tsp. dried thyme
1/2 tsp. paprika
1/2 tsp. salt
4 boneless, skinless chicken breast halves
3 Tbsp. Dijon mustard

MAPLE-DIJON SAUCE:
1/4 c. pure maple syrup
1 Tbsp. Dijon mustard


Preheat oven to 375 degrees. Spray a 13x9x2-inch baking dish with nonstick cooking spray.
In a shallow bowl, combine the pecans, bread crumbs, thyme, paprika and salt. Coat chicken with mustard, then with pecan mixture.
Place chicken in the prepared baking dish. Bake, uncovered, @ 375 degrees for 30-35 minutes or until juices run clear.

For the sauce, combine the maple syrup and mustard in a small bowl. Serve the chicken with some of the Maple Dijon sauce drizzled over top. 4 servings.
