Mrs. Salter's Peanut Butter Pie

1 1/2 cups heavy whipping cream

1/4 cup sugar

8 ounces cream cheese

1 cup crunchy peanut butter

1 cup powdered' sugar

1 graham cracker crust, store-bought or pre-made



Whip cream with 1/4 cup sugar. Mix all other ingredients until smooth and fold in whipped cream until well blended. Pour mixture into a graham cracker crust and chill for several hours before serving.

This is rich and best served after chilling over night, in my opinion. I used creamy peanut butter. I think 1 cup of whipping cream probably would have been enough.

I added a tsp. of vanilla to the whipped cream.

Graham Cracker Crust



18 graham cracker squares- 1 pack

1/4 cup sugar

6 T butter, melted

Put crackers in large ziploc and make crumbs using a rolling pin. (Or pulse in a food processor.) Put in bowl and mix in sugar, then butter.

Press into pie plate and bake at 375 for 6-8 minutes.
