Here are a few from my collection, mostly simple. I've noticed over the years when reading pea salad recipes that people tend to make them with just about everything they enjoy. I don't care for cheese in mine, so my recipes are simpler. I've noticed chopped hard boiled eggs, chopped dill pickles, a variety of nuts, mint, etc., so you really could make one that suits your family perfectly by adding and omitting ingredients according to your tastes:
Pasta Pea Salad
This is so easy and so tasty a great side dish for cookouts or a great take along dish for a pot luck.
12-oz package rotini pasta
10-oz package frozen peas thawed
1 small red onion chopped
1/2 c mayo
1/2 c sour cream
A couple dashes hot pepper sauce
Cook pasta according to package directions, drain and spread on cookie sheet for quick cooling.
In serving bowl mix rest of the ingredients.
When pasta is cooled add to mixture.
Chill in refrigerator for at least an hour before serving.
Dilled Pea Salad
10 oz pkg. frozen peas
(1/2) 8-oz can, 1/2 c, sliced water chestnuts, drained
1/4 c plain low-fat yogurt
3/4 t dried dill weed
1 T reduced calorie mayonnaise or salad dressing
1/8 t onion salt
1/8 t pepper
2 T chopped pimiento or roasted red peppers
Place frozen peas in colander. Run hot water over peas just until thawed and drain well.
Mix together yogurt, mayonnaise or salad dressing, dill weed, onion salt and pepper. Add thawed peas, water chestnuts and pimiento. Toss lightly until coated. Makes 4 servings.
Pea Salad with Bacon Green Onions and Cashews
1 pkg frozen peas, thawed
1/2 to 1 c sour cream
2-3 pieces of bacon, cooked and crumbled
several green onions, chopped well
salted cashews, as many as you like
Mix all together and chill well.
Frozen Pea Salad
1 pkg frozen peas
1 c chopped celery
1/2 c chopped onion
1/2 c crisp bacon
1/2 c salted peanuts
1/2 c sour cream
Combine ingredients and refrigerate until ready to serve.
Swiss Green Pea Salad
1/2 c mayonnaise
1 t sugar
1/2 t nutmeg
1-1/2 t Dijon mustard
2 qt torn romaine or iceberg lettuce leaves
6 strips crisply cooked bacon, thawed
6-oz Swiss cheese, cut into matchstick size pieces
10-oz pkg frozen peas, thawed
1 small red onion, thinly sliced
2 stalks celery, thinly sliced
salt and pepper
Combine mayonnaise, sugar, nutmeg and mustard. Set aside.
In a small bowl, mix together lettuce, bacon; reserve 2 T, cheese, peas, onion and celery.
Pour over dressing and toss gently to coat evenly.
Season to taste with salt and pepper.
Garnish with reserved bacon.

RedTop, yours is one that is served on a lot of salad bars in my area. I like the idea of adding some water chestnuts (or maybe some cashews) for an added crunch.

Could you please take the time to post the recipes for those salads? I know there are many and it would be a job but you would really be helping those of us who are stuck in a rut making the same old salads week after week.
I do make a couple which are different than yours and I would be happy to share those in return. It would be real special if everyone would jump in with their faves.....

I am sorry that I just now read your posting. Unfortunately, I pretty much am an intuitive cook and do not have and written recipes for these salads. The Food Network site may be of some help.

I make this one too...when I bring to any event it is always completely gone. My family loves it to. I love the fact that this can be made the day before, wrapped tightly in plastic wrap, and eaten the next day or two.
