I've never made this, but I've had it a lot. Now I'll be able to make it - thanks!

I make another version of a pea salad that people like:

Pea Salad

1-2 cans Le Sueur peas, drained

2 small jars pimento, drained

1 small onion, chopped

1 c. celery, chopped

1 c. green pepper, chopped

paprika

salt and pepper

1 c. white vinegar

1/2 c. oil

1 c. sugar

Mix vinegar, oil, and sugar. Pour mixture over vegetables. Refrigerate for one day before serving. Double the recipe for a large crowd. (May use frozen baby peas instead).

Love Pea salad, the one I make is a little different. it has just sour cream, frozen peas, thawed, bacon, green topped onions and topped with peanuts or cashews.

Kind of sweet and salty. I  don't add the nuts to the salad as they will get mushy.
