Pea Salad For Spring & Easter

It seems to me that peas have always somehow signaled spring.  I'm going to make a pea salad for Easter and wondered if anyone else does this.

 

I found a recipe last year which adds pieces of bacon, a little onion and bits of cheddar.

Me too.  I found mine last year (to late for Easter) on Pioneer Woman's website so this year I am ready.  Bought all the ingredients and emailed my daughter-in-law today of all the items I am bringing with that listed.   I have seen it also listed in other sites with relish, bell pepper, and even hard boiled chopped eggs.  Peas and cheese or for sure for mine.

This sounds like the recipe I use.  I put in the peas, mayo, red onion, cheddar and bacon.  I feel the same about peas and spring. 

I've noticed some green houses popping up around town also.  So ready for spring. 

It is in the upper 50's right now here and very nice, but predicting we may get 4-8" or more of snow tomorrow.  At least it won't last long.

This is the recipe I used last year, which we really liked, but there are other versions available online.  I left out the paprika, though.

Bacon Pea Salad
 
 
 
Ingredients
  • 1 pound of bacon, cooked according to package instructions, drained and crumbled or finely chopped
  • 2 pounds frozen peas, thawed in the refrigerator overnight
  • ¾ cup coarsely grated sharp Cheddar cheese
  • ½ small red onion, peeled, and finely chopped
  • ½ cup of mayonnaise
  • ½ teaspoon kosher salt
  • ½ teaspoon coarsely ground black pepper
  • ¼ teaspoon paprika
Instructions
  1. Stir together all of the ingredients and serve immediately, or (preferably) put in a Tupperware, Gladware, or other tightly covered container in the refrigerator to give the flavours a chance to meld for an hour but up to three days prior to serving. Give it a gentle stir from top to bottom before serving.

@Noel7 Thanks for this recipe. I've had it at many Easter gatherings but never knew the recipe, my folks didn't like peas but like y'all, peas signal Spring to me. I'm definitely making this for Easter.
