Hi Everyone,

 

I just got done making a Pasta Salad for our dinner tonight...I will serve it over some Spring Mix and garnish with eggs and tomatoes!..I make the vegetables that I add the focus of the salad...not the Pasta...so it is more healthy and no worries about carb overload....Perfect for a hot, humid Summer day!

 

I would love for you to share your favorite Pasta Salad Recipes that I can try out...I realize that I can just google, but it is much more  fun to share with others on the forums!

Penne alla Caprese

 

This is a delicious Summer pasta salad, using tomatoes at their peak.

I posted this recipe a few days ago, so there is no reason to duplicate it.

I love tomatoes and often just eat them on their own...I just checked out your recipe and it sounds delicous...It would also be great as a side dish for those watching their complex carb intake...Thanks for sharing!

If you love tomatoes, I urge you to check out --not because I posted it, but because it is so darn good--Panzanella.  It's another great Summer salad, but without pasta.

I went to a pig roast a few weeks ago and the Mac salad was delicious. When I asked the hostess for the ingredients, she told me it was Betty Crocker's Suddenly Salad with a few additions. She mixes original and creamy Italian and lets it sit overnight. I have to say it was great !

I have been disappointed in the taste of tomatoes for a long time. Even my beloved Jersey tomatoes...... Then I discovered Campari Tomatoes. They are consistently excellent so that's all I buy for snacking, sandwiches and salads.

I'm a big fan of "Antipaso Pasta Salad" from allrecipes dot com.

 

Try making it "as is" or taking suggestions from the reviewers.  You can go less on the asiago cheese, but don't substitute - I think this is what makes the salad!

 

I've tweaked it over the years (replace pepperoni with more Genoa salami, use halved grape tomatoes, go crazy on adding veggies, less oil and oregano and more vinegar, etc. to suit our taste.)

Thanks for directing attention to the antipasto salad.......been wondering what to do with the shell pasta I have stored away and will give it a try. I used to make a similar salad with salami and thawed baby green peas, celery, onions, etc., and it's time for a new version.

@Danky -- I'm with you on the Campari Tomatoes.  They are consistently the best tasting grocery store tomatoes and seem to be available and consistent year round.  They'll never beat home grown, but at least they taste more like tomatoes than cardboard.  Sam's Club has larger packages, but I've never compared prices.  I just buy from whichever place I'm handy to when I need more tomatoes.  For anyone who's never noticed them, they are in rectangular plastic boxes, usually right next to the grape or cherry tomatoes.  They're smaller than standard tomatoes but larger than the cherry ones. I like Sunset brand best.

I love Antipasto Pasta Salad also and will definitely check out the website that you mentioned...Your version also sounds very similar to mine...There are so many wonderful varieties of making healthy, delicious pasta salads...just use our imaginations, also,  and enjoy experimenting!
