Pasta LoLa

My family just loves this pasta sauce. It's fresh and delicious and super EASY! You can substitute any pasta that your family likes. I really hope that you enjoy it!

2 - 15oz cans crushed San Marzano tomatoes
2 - tablespoons extra virgin olive oil
2 - cloves of garlic finely chopped
2 - tablespoons freshly chopped parsley
1 - medium vidalia onion finely chopped
1/2 pound of bacon or pancetta - diced
1/2 pound of button mushrooms - sliced

1/2 teaspoon oregano
1/4 teaspoon red pepper flakes
1/4 cup red wine (one you like to drink)
1/4 cup heavy cream
1 cup parmigiano-reggiano grated
1 pound of Penne Rigate (I like Barilla enriched or wheat pasta)
Salt and freshly ground pepper to taste

Cook the bacon or pancetta in a saute pan until golden brown. Remove from pan and place on a paper towel-lined plate to drain. In the same pan remove all but 1 tablespoon of the drippings and add the onion and the olive oil and cook until the onion is soft and transparent. Add the garlic and other seasonings: oregano, parsley, red pepper flakes,salt and pepper. Add the mushrooms and let cook for about 5 minutes. Now add the tomatoes and the wine. Allow to simmer on low for about 30 minutes. Turn off the heat and add the cream and bacon/pancetta and stir well. Taste and adjust s&p if needed. Cook the pasta according to package instructions. I cook mine to al-dente because when I drain the pasta I add it to the sauce and let it cook for a few minutes. Add the cheese to the pasta right before serving.
