Paleo Recipes (for extra protein)

This is the first one I've done.  I love zucchini, so it was a no-brainer.

 

Ingredients
  • 2 cups zucchini, peeled and cut up into small cubes
  • 1/2 cup water
  • 2 TBSP coconut oil, melted
  • 4 TBSP gelatin
  • 2 TSP lemon juice
  • 2/3 TSP of fine sea salt or more to taste
  • 2 TBSP nutritional yeast (optional)
  • 1/2 cup fresh parsley, chopped
 
Instructions
  1. Steam the zucchini for 5 minutes, until tender.
  2. Drain the zucchini.
  3. In a high speed blender, blend the zucchini with water, coconut oil, lemon juice, and salt for 30 seconds or until smooth.
  4. Add the gelatin and the nutritional yeast. Blend for another 15 seconds.
  5. Pour the mixture in a bowl, add the parsley and mix well with a spoon.
  6. Pour the preparation in a foil loaf pan and refrigerate until set (at least 4 hours).
  7. Bon appétit!

 

I went overboard on the parsley, so be careful.

I use this cheese in salads or munch as a snack.

If you love zucchini, you'll love this.

@RinaRina  Thanks for posting.  Zuchinni, lemon, coconut oil, nutritional yeast, parsley YUM... (the geletin is a big no for me- for those of us who don't consume animals, agar-agar can be used as a substitute).

Do you eat fish?

I used marine gelatin.

Anyway, glad U posted the feedback.  I thought agar-agar was a sweetner.  Didn't know you could use if for gelatin.  Good 2 know!

Yikes, my mistake!  I used PORCINE gelatin.  If you're a vegan, I know you wouldn't want to use that!  LOL!

@RinaRina No way....I love pigs, they are so intelligent and make outstanding pets!  Besides agar-agar (also called Kanten), I've used Irish Moss.
