@walker I was reading an old Kitchen and Food Talk post where you said
Love fondue dinners.....I do beef fondue with dips. Buy good piece of sirloin and cut into cubes.....cook in peanut oil. Fix dips (will post if interested).....fix salad....slice French bread....serve wine.....very relaxing dinner. Can start with cheese fondue and end with chocolate.
Would you please post the meat fondue dips you use? I love all types of fondue and would love some new ideas for dips/sauces for the meat ones.
All other fondue recipes are welcome in this post also. Thanks!

Thanks for post on fondue dips. As I mentioned, fixing a fondue dinner is a favorite thing to do with friends. I will list dips I have used but find most people prefer simple things with meat...no fuss...steak sauce is good. So, I fix dips but also have sautéed mushrooms and steak sauce too. Recipes are easy to double if needed. Only one I have had to double was egg dip...Sauce Remoulade. Enjoy!
Hot 'n Spicy Sauce
1 cup chili sauce
1/2 cup chopped onion (ok to substitute dried minced or chopped)
3 tablespoons lemon juice
2 tablespoons salad oil
1 teaspoon brown sugar
2 teaspoons vinegar
1 clove garlic, crushed
1/4 teaspoon Tabasco (optional)
1/4 teaspoon dry mustard
1/4 teaspoon salt
Combine all ingredients in small saucepan. Heat to boiling; simmer 5 minutes. Serve warm or cool.
Sauce Remoulade (sounds odd but a favorite here with beef)
1 cup mayonnaise
1/4 cup chopped green onions
1 hard cooked egg, finely chopped
2 teaspoons prepared mustard
2 teaspoons snipped parsley
Combine all ingredients; refrigerate.
Horseradish Sauce
1 cup sour cream
2 tablespoons horseradish
1/2 teaspoon lemon juice
1/4 teaspoon Worcestershire sauce
1/8 teaspoon salt
1/8 teaspoon pepper
Combine all ingredients; refrigerate.

My husband and I used to have beefsteak fondue often.
His favorite dipping sauce is pretty simple--just a dish of melted butter with crushed garlic cloves in it, which also goes well with shrimp fondue,
. Mine is the sour cream-with-horseradish sauce already posted here.

Thanks for your replies and recipes -- the Remoulade brought back a good memory of my very first meal in New Orleans as a teenager. I had Shriimp Remoulade at a restaurant called Tujague's, a taste I still remember. Last Saturday night PBS did a special on Katrina Ten Years After. The only restaurant sign they showed in the opening sequence was "Tujague's." I need to look online and see if they're still in business.
My uncle's family loved to have fondue get-togethers. Their sauces didn't have the elegance of yours, but they were part of some good times.
Beef Fondue Sauces
1) Sour Cream
Stuffed green olives, chopped fine
dash Angostura Bitters
2) Catsup
Yellow Mustard
Sweet Pickle Relish
Dash Pickle Juice
3) Catsup
Grainy Mustard or Yellow mustard
Lemon juice
Heinz chili sauce
Inglehoffer Thick-n-Creamy Horseradish
4) Emergency Sauce
Mix packets of
Arby's Horseradish sauce
Arby’s BBQ sauce
5) Del’s Sauce
Use equal parts --
mustard
vinegar

To give equal time to dessert, here's the oldest fondue recipe I have. I got it from a square dance caller's mother in Fontana Village, North Carolina -- hence the name. The notes are hers. It's still the best chocolate fondue I've ever had.
Fontana Ultimate Chocolate Fondue
1 (8-ounce) package semisweet chocolate, broken in pieces
1 (4-ounce) package sweet cooking chocolate, broken into pieces
3/4 cup evaporated milk (I usually use a full cup)
1/4 cup sugar
2 tablespoon Kirsch (omit if desired)
Combine chocolate, milk, and sugar in a double boiler and cook over low heat, stirring frequently, until chocolate is melted and smooth. Stir in Kirsch and pour into a fondue pot. Serve with sliced bananas, pineapple chunks, cherries, fresh strawberries, pieces of fresh coconut, chunks of cake – or naked fingers!
To prevent discoloration of banana slices, place them in a mixture of 1/2 cup lemon juice and 2 tablespoon honey before putting them on the platter.

I don't know why more people do not enjoy fondue. Maybe everyone just likes to sit...eat...go. I love the slowness of fondue...so good and you don't feel full after dinner. I like the recipes posted too..thanks.....chocolate fondue...yum...what is not to like about that? Slow down...eat and enjoy!
