Pumpkin Banana Bread //// 1 1/2 c. sugar // 3/4 c. butter, softened // 3 eggs // 1 c. canned pumpkin (pure) // 2 ripe bananas, mashed // 3 c. flour // 2 tsp baking soda // 1 tsp salt // 1/2 tsp baking powder // 1 tsp pumpkin pie spice // 1 c. chopped walnuts or pecans. Heat oven to 350 degs. // In large mixer bowl combine sugar, butter & eggs. Beat at med. speed, scraping bowl often, until mixture is light & fluffy. Add pumpkin & bananas; continue beating until well mixed. (Mixture will have curdled appearance.). Add remaining ingredients EXCEPT nuts; mix just until moistened. Stir in nuts. Spread into 2 greased 8"x4" loaf pans. Bake for 50-60 min. or until toothpick inserted in center comes out clean. Cool upright in pans for 5 min; remove from pans. Cool completely. Yields 2 loaves.
