4 med baking potatoes, scrub but do not peel, cut in quarters
1-1/2 cups Gruyere cheese, shredded, divided
1/4 cup half and half
3 T chives, coarsely chopped
2 T butter, melted
pinch of nutmeg
salt and pepper to taste
Preheat oven to 350.
Butter an 8 x 10 baking dish. Bring a large pot of water to a rolling boil over high heat. Add potatoes to water, reduce heat to medium, cook 10-15 minutes or until potatoes are very tender. Drain and coarsely mash potatoes with a fork. Mix in remaining ingredients except 1/4 cup of cheese. Spread potatoes evenly in prepared dish. Sprinkle remaining cheese on top. Bake 25 minutes. Brown under broiler if necessary. Serve immediately.
