PINEAPPLE SOFT COOKIES

INGREDIENTS:

1 cup brown sugar

1 cup white sugar

1 cup shortening (crisco)

1 cup crushed pineapple (drained)

1 teaspoon soda

1 teaspoon baking powder

1 teaspoon vanilla

2 eggs

4 cups all-purpose flour

DIRECTIONS:

1. Preheat oven to 325 degrees or 350 degrees.

2. Mix sugar, shortening (cream together).

3. Add eggs, soda, baking powder and vanilla (blend alternately with flour).

4. Drop spoon fulls on greased cookie pan. (I use the Pampered Chef medium scoop leveled).

5. Bake 10 to 15 minutes.

My mother is 87 years old and is still baking these wonderful soft cookies. This recipe has been in her family since she was a little girl. She baked them when I was growning up and now I am baking them for my family. The cookies are soft and cake like with a wonderful pineapple flavor.
