PINEAPPLE CASSEROLE
1/4 cup butter, softened
1 cup sugar
4 eggs
1 can (20 oz) crushed pineapple, drained
1 1/2 tablespoons lemon juice
5 slices day-old white bread, cubed
In mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Stir in pineapple and lemon juice. Fold in the bread cubes.
pour into a greased baking dish. Bake uncovered, at 325 degrees for 30-40 minutes, or until set.
A great side dish for a ham dinner.
