Tried this recipe last night and really liked it. I think it has lots of variety. Next I may leave the peas out and add currants to it instead.

2 T unsalted butter
1 cup basmati rice
1 t turmeric
1 bay leaf
4 whole green cardamom pods
4 whole cloves
1/2 t whole fennel seeds
1/2 t kosher salt
1-1/2 cups boiling water
1 cup frozen peas at room temperature

Melt butter in saucepan. Stir in rice until coated. Add spices and salt. Pour boiling water overall. Cover and simmer on low heat for 15 minutes. Uncover and stir in peas. Cover again and let sit for 3 minutes to heat up peas. Remove bay leaf, cloves and cardamom pods as you eat.

Serves 4

Note: The last sentence in recipe did not appeal to me so I put bay leaf, cloves and cardamom in a tea infuser so I could just pull them out (you could also wrap up in cheesecloth). I also purchased the cardamom pods and whole cloves at market that had bulk spices so I could just buy what I needed.

try adding some chicken broth instead of all water and substitute saffron for the tumeric......very delicious also. we make rices similar to these often, but have never used cardamom or cloves. slivered carrots also work well.

Dianne, I don't think I would wait until I'm eating to remove a cardamon pod either!
