This recipe came from Tricia Yearwood's show (I think it's in one of her cookbooks). I have made it twice now. The first time I made it as is but the 2nd time I toasted the nuts before chopping them. I like it with the toasted nuts the best but it is fine with just plain chopped nuts. I also doubled the recipe the 2nd time as it only makes about 9 muffins but in some cases that could be a good thing. Eating one of these is literally like biting into a piece of pecan pie. I also had to lengthen the baking time to about 30-35 minutes.
PECAN PIE MUFFINS
Nonstick cooking spray
1 cc. chopped pecans
1 c. brown sugar, packed
1/2 c. all-purpose flour
2 large eggs
1 1/3 sticks butter, melted
Preheat oven to 350. Place paper liners in 9 muffin cups & spray with nonstick cooking spray. In a large bowl, combine the pecans, sugar & flour. Make a well in the center of the mixture. In a separate bowl, beat the eggs until foamy. Add the melted butter & stir to combine. Pour the egg mixture into the well in the dry ingredients, stirring until moistened. Spoon the batter into the cups, filling each almost full. Bake until a toothpick comes out clean when inserted in a muffin, about 20 minutes. She says that this makes great mini muffins, just shorten the baking time by 5 minutes.
I hope you like them. They are not exactly low fat but are still delicious as a treat!

I think I had seen that show, but didn't look up the recipe. Thanks for sharing, you just never know if what you see on tv that looks good is good or not.

This seems so easy to get the delicious pecan pie taste! Thanks for sharing....and for your suggestions and tips. I find that very helpful!!
When you made them...did you use normal size cupcake pans?
I don't have one of those jumbo muffin/cupcake pans...just the old fashioned one w/ 12 holes. They seem so small these days compared to the giant cupcakes every one makes!

Yes I used the normal size cupcake pans. I don't have any of the mini or jumbo ones - just the regular size besides knowing me the way I do if I made the mini ones I'd just eat more of them.

I have the 6-muffin pan that makes huge ones...but I think I will try this recipe with the regular sized one......the huge ones might be too much of a good thing!

Thanks! I agree..LOL...I do have the mini pans...but I would pop those little buggers in my mouth one right after another! After all...they are small, right?

When we are lucky enough to get fresh pecans (the squirrels usually get them first), I always rinse them very well, and then lay them out to dry. After that, I put them in the oven for about 10 minutes at 300-350 to lightly toast. But test after just a few minutes so they won't burn. An aunt of my DH told me her MIL did this and we use them in all kinds of goodies or just eat them. I think they are better toasted slightly.
A friend gave me a Pecan Pie Muffin recipe years ago that an English friend of hers gave her but not sure it is the same as this one. But they are delicious. And so easy to make. I thought I had put it here one time but not sure. I would have to go back and look and that would take quite a bit of time. But do try them. I think you'll like them.
