I have an easy side dish recipe for Passover or the Seder:

 

I make a Peach Kugel. I use farfel (or break up matzo into small pieces) and  layer with canned peaches or peach pie filling (low sugar if possible). Layer this with farfel and a little cinnamon. The farfel softenes as it bakes with the peaches. I've substituted strawberry or cherry pie filling, too. Add a little margarine on top.

 

Bake at 325 for about 45 minutes until bubbly.

 @Shanus  That sounds yummy!!  Do you make matzoh brie? It's a big hit in my house.

1 matzo 

1 egg

Dampen the matzoh with water,then break it up into several pieces.

Beat the egg

Combine the matzo with the egg. Make sure you coat the matzoh well.

Heat up a frying pan. You can use some oil if you like. 

Pour the mixture into the pan.Brown on both sides.

You can serve it with applesauce or preserves. We like to just sprinkle salt on top.

Note: I like to make one at a time.But you can make it with as many matzohs as you like.Just be sure to add an egg for everyone. If you put in several in will come out thicker.More like a kugel. That's good too.

@NicksmomESQ   It's been a favorite for generations at our house. My kids put syrup like French toast, I just ate it as is. Sometimes if serving a lot of people, I scramble it and let it brown well.

Question if anyone knows answer: During Passover, no leavening, so that means yeast? Why is pasta and items with flour included on the NO list?

@Shanus Apparently all wheat flour has some tiny amount of naturally occurring yeast in it which I believe is the reason it is on the verboten list of foods.

PASSOVER DESSERT

 

I like to stew any seasonal fruit in a little white or red wine (depending on fruit). Cool and serve with ice cream and toasted macaroons sprinkled on the top.

Break up matzah & mix with beaten eggs. Usually 1 egg to 1 piece matzah. Season to taste with salt & pepper. In skillet saute on oil (or butter if using as a dairy side dish) chopped onions, celery, mushrooms until just soft. Stir veg mix into matzah mix. Pour mixture into oiled skillet. Brown both sides to cook eggs. Served in wedges with roast chicken, turkey or fish.
