This a little different take on potatoes.

9-10 medium sized red potatoes
2/3 cup milk
2/3 cup sour cream
1 pound sharp cheddar cheese, shredded
1 t ground nutmeg
2 t dry mustard
1/2 t salt
1/2 t pepper
8-10 oz smoked salmon
1 bunch green onions, chopped

Poke potatoes with fork and cook in microwave until just tender. Cool and slice.

In a saucepan combine milk, sour cream, cheddar cheese, mustard, salt, pepper and nutmeg. Cook over medium heat just until cheese melts. Do not boil.

Add sliced potatoes to well greased 9 x 13 casserole dish. Sprinkle with salmon bits and green onion. Cover with sauce and bake in 350 degree oven for 1 hour.

Sauce may look lumpy but that is OK. I sprinkle with additional green onion for garnish.
