It's been years and years of buying boxes of different brands and seasonings and finally went to All Recipes and found this fish coating.  It's delicious, thats what was for dinner tonight.

 

Grease a sheet pan  Preheat oven to 450 deg

 

Mix 1/3 cup EACH bread crumbs (I used panko), parmesan cheese, and instant potato flakes.  Add 1 teaspoon seasoning salt and mix.

 

In a separate bowl, whip 2 eggs with 1 Tablespoon water.

 

Dip fish in egg wash, then in dry mixture.  Place on sheet tray 

Depending on your fish 15-20 minutes.

 

I had 3 walleye fillets but I had enough to do 6.

 

Really good...no more boxes for me.

I brush fish or chicken with sour cream and dip in panko bread crumbs. old bay seasoning and parm cheese.  Might try adding instant potato flakes.  Sour cream is less messy than egg wash or even heavy cream for me.

I like to grind up my panko crumbs in my Ninja for a second or two to make them finer. They still have the same crunch, but are less bulky and make a better coating. (In my opinion anyway.)

I like my fish naked--nothing on them but seasonings--maybe butter, lemon juice or even mayo---am watching my carbs too.

@Mistreatedbycs - This is similar to the one I use, and I will try it. I've used this one for years. We especially like it with orange roughy.

 

 

1 c. skim or low fat milk

1 tsp. salt

1- 1/4 lbs. orange roughy filets

2/3 c. dried bread crumbs

1/4 c. grated Parmesan cheese

1/4 tsp. ground thyme

Vegetable oil cooking spray (I use PAM)

 

Heat the oven to 450 degrees.

 

Combine the milk and salt in a shallow bowl or pan and coat the filets well.

 

In a second shallow bowl combine the bread crumbs, Parmesan, and thyme. Remove the filets one at a time from the milk and dip them into the crumb mixture, coating them thoroughly.

 

Place them onto a baking pan and spray one side of each filet with the PAM. Turn over and repeat on the other side. 

 

Place the pan in the middle of the hot oven and bake about 12 minutes, or until they are just baked through.

Oh so similar and I bet this one is good too.

 

 

I try yours too!

 

 

I wish I would of posted earlier, I've purchased so many coatings and even the coatings that are made for the air fryer and those were terrible, both the fish and chicken one.
