This is so easy to fix and good to eat! One caution about cooking time. Generally speaking, I've found that 10 min is usually all it takes to cook a piece of fish 1" thick at 375 deg. The fillets called for here are only 1/2" thick and the temp is 400 deg F. I've also read recently that some chefs feel that fish is overdone by the time it begins to flake. So, you may want to watch the fish closely and use a shorter time for baking.
Onion Crusted Tilapia
4 oz, 2 c, French’s friend onions, crushed
1 T minced parsley or cilantro
1 t grated lemon zest
1/2 t paprika
1/3 c flour
(4) 1/2” thick tilapia fillets
2 eggs, beaten
Place friend onions, parsley, zest and paprika in large zip lock bag. Crush onions with rolling pin, shake well. Transfer to pie plate.
Place flour in another bag. Add tilapia and shake well to coat.
Dip flour-coated tilapia in egg mixture and then in onion crumbs.
Place on foil-lined baking sheet and bake at 400 deg F for 12-15 min, or until fish flakes easily.
