Old-World Raspberry Bars

Rich, moist bars filled with raspberry preserves.

2-1/4 C. all-purpose flour

1 C. sugar

1 C. chopped pecans

1 C. butter (or margarine, but butter's better {#emotions_dlg.biggrin}) - softened

1 egg

1 - (10 oz.) jar (or 3/4 C.) raspberry preserves (or substitute 1 - 10 oz. jar of your favorited flavored preserves.)

HEAT oven to 350 degs.. In large mixer bowl, combine all ingredients EXCEPT the preserves. Beat at low speed, scraping bowl often, until well mixed. (2-3 minutes.)

Reserve 1-1/2 C. mixture; -- set aside. Press remaining mixture into greased 8" square baking pan; spread preserves to within 1/2" from edge. Crumble reserved 1-1/2 C. mixture over preserves. Bake for 40-50 minutes or until lightly browned. Cool completely; cut into bars.

YIELD: 2 dozen
