Oh Mom, That Old Pound Cake Again?

Ok my baking friends, here are more than a few ideas to switch up your pound cake rotation:

Oh my goodness!!!!!

That was painful.  Not a bad one in the bunch.  I want a piece of any one of them now.

summer-= pound cake, some ripe South Carolina/Georgia sliced peaches and freshly whipped cream.  magnifique!

My favorite is Lemon Pound Cake:

 

1 stick softened butter

1 1/4 cups sugar

2 room-temperature eggs

2 tbsp and 2 tsp of lemon zest (4 lemons)

1 1/2 cups flour

1/4 tsp baking powder

1/4 tsp baking soda

1/2 tsp kosher salt

1/2 cup lemon juice

1/4 cup + 2 tbsp room-temperature buttermilk

1/2 tsp vanilla

1 cup sifted confectioner's sugar

 

Cream butter and 1 cup sugar with electric mixer until light and fluffy, about 5 minutes.  Add eggs one at a time mixing on medium speed, then mix in zest.

Sift together flour, baking powder, baking soda, and salt in bowl.  Mix 2 tbsp lemon juice, buttermilk, and vanilla in another bowl.  Add flour and buttermilk mixtures alternatively to butter/sugar mixture, ending with flour.  

Grease and flour a loaf pan, and line bottom with parchment paper.  Bake at 350 degrees until toothpick comes out clean, 45 minutes - 1 hour.

Mix 1/4 cup sugar with 1/4 cup lemon juice in small saucepan over low heat until sugar dissolves.  

Cool cake for 10 minutes after coming out of the oven.  Invert onto rack set over a tray and spoon lemon syrup over cake.  Let cool completely.

Whisk confectioner's sugar and 2 tbsp lemon juice in bowl until smooth.  Pour over top of cake and let drizzle down sides.

I have the opposite situation. We have a family recipe that has been used for generations. If I make a different one, I really hear it. Sometimes I’ll make a different one for an event without my family. I would love to try some of these.
