No Leftover Spinach

1 package frozen chopped spinach

1/4 C chopped onion, or more

pinch of salt and pepper

4 T. butter

1/2 C sour cream (I didn't have any so used 2 T. of cream cheese and a little cream)

Cook spinach with onion in butter, stirring well.

Add salt, pepper, and sour cream

Gently combine, cook till nice and hot.

So easy and so very good!
