Fast and tasty!

3 c flour

3 T sugar

1 1/2 t salt

4 1/2 t baking powder

12 oz beer (any kind but light) OR 12 oz soda (any kind but diet)

chopped herbs, optional


Combine all ingredients, try to mix/stir as little as possible. Preheat oven to 400, grease a loaf pan or a 3 qt covered casserole. Bake for approximately 50 minutes.

Thanks! I love beer breads and will try this one for sure. I'd forgotten about avoiding over-mixing, so thank you for that instruction in particular.

I'm always looking for no-knead bread recipes- found a bunch on youtube that work pretty well, including a french bread recipe. Also found a fab English muffin recipe that works beautifully. The logic there seems to be to bump up the proofing time to make up for the no-kneading.

Must, that English muffin recipe looks doable. I'll have to give that a try.

I've made the muffins a few times. Surprisingly VERY easy and yummy. Also goof-proof, which is the key for me, since I am not a great cook by any means.

Mostly I get lazy and head for the stores but there's nothing to beat the taste of breads made at home. Beer breads are a godsend. I'll report back how mine turns out.
