3 cups cooked chicken (I used canned chicken breast)

6 cups chopped romaine lettuce

1 tomato, chopped (I used sliced grape tomatoes)

1 cup drained southwestern corn

1 cup drained and rinsed black beans

1/4 cup diced red onion

1 cup of shredded sharp cheddar cheese

tortilla salad strips

 

Dressing

 

3/4 cup ranch dressing

1/4 cup barbecue sauce

 

I also threw in some diced red bell pepper.

Thanks for sharing this. I frequently have grilled chicken extras and just have to stock up on the beans, corn and tortilla chips.

Can't wait to make this; maybe next week!

This salad is the basis of a southwest salad in our home.  Same recipe except:

 

No chicken

plant based cheese

dressing - Hidden Valley Plant based Ranch with 1/2 cup salsa (love the fresh organic salsa from Costco)

@coconut1818 Thisi is a good receipe and I will be making some this summer.  I generally just make the usual chicken salad when I have left over baked or grilled chiicken and rotisserie chicken.  Thanks for sharing, sounds delicious.

Thanks everyone. Grilled chicken sounds great! Next time I will add some avocado. I live alone so I keep everything separate in Lock n Lock, so that I don't waste anything. I don't remember where I got the recipe, just scribbled it down on an index card.

I've been serving and eating alot of salads lately and adding in leftover chicken, salmon, and steak--taste so good to me.
