Need simple recipe for Hummingbird Cake

Yes, I can look it up.  But am wondering if someone might have a super easy recipe for Hummingbird Cake. Something they have personally tried and served.

This is a very old southern recipe that I've used for years and everyone that's tried it loves it!

 

HUMMINGBIRD CAKE
.
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 cups sugar
3 eggs, beaten
3/4 cup vegetable oil
1 1/2 teaspoons vanilla
1 (8-ounce) can crushed pineapple,
undrained
1 cup pecans, chopped
1 3/4 cups bananas, mashed

Preheat oven to 350 degrees. In a
large bowl, combine flour, soda, salt,
cinnamon, and sugar. Add eggs and oil,
stirring until flour mixture is moistened.
Do not beat. Stir in remaining
ingredients. Pour batter into 3 greased
and floured 8-inch round pans. Bake for
23-28 minutes or until a toothpick
inserted in the center comes out clean.
Cool in pans for 10 minutes. Invert
onto wire racks, and let cool completely.
Frost with Cream Cheese Frosting,
Yield: 16-20 servings.

CREAM CHEESE FROSTING:
.
1 (8-ounce) package cream cheese,
softened
1/2 cup margarine, softened
1 teaspoon vanilla
1 (1-pound) box confectioner's sugar
1/2 cup nuts, chopped

Mix all ingredients; beat until smooth.
Frost cooled cake.
Yield: 3 cups.

I have never even eaten a hummingbird cake but know they are famous in the South.  There is a recipe for a sheet cake version on the Southernbite.com website.  You might want to check that out.  Just type in hummingbird sheetcake when you log onto that site.  I do find that sheet cakes seem to feed more people and may be a tad easier to make.  Hope this helps, but whatever you decide to make, hope it turns out delicious!

I am glad I saw this, but I have no idea when I mightmake it since I would eat the whole thing myself.

 

Our local Amish market always has big slabs of this for a few dollars.  I made the mistake of buying it for some guests that didn't show.

 

Needless to say, it didn't go to waste.

 

Just a fabulous cake -- with a cup of coffee it is heavenly!
