It does seem you have the situation under control and that you have gotten some help.  Just wanted to apologize for not seeing this sooner (we are on vacation) but felt I had to comment.  Being kind of an old hippie (Woman LOL) I was into making home made baby food way before it was in fashion.  To make it is easy and tastes so much better than premade and was already commented on, you can season it anyway you want.  Just boil, steam, bake, microwave-however you want to cook the veggie until completely done and just mash it up-can be done with a fork, masher, blender, food processor, etc.  I used to just "plop" out tablespoons of food on a baking sheet and freeze it that way.  When completely frozen, I put them in freezer bags that I labeled and dated.  Just telling you this since you said this woman could only eat small amounts at a time.

Wow @A60_Chevy that's just an awful situation for her to be in but she is surely fortunate to have someone like you looking out for her. 

 

A few ideas:

 

Pudding, light soups, broths and the like are fine but for some intense nutrition completely liquefied whole food smoothies would help her a great deal.  Do you have or have access to a high powered blender such as a Nutri Ninja, Blendtec, Vitamix, or Nutri Bullet?  Getting some whole fruits and vegetables into her would be great.  The Vitamix can especially provide her with delicious, whole food hot soups as well.

 

If not, do you have a regular blender?  If she likes shakes, how about chocolate malted shakes--chocolate ice cream, milk, and Ovaltine Chocolate Malted Milk Powder, along with a scoop of high quality plain, vanilla, or chocolate protein powder?

 

One of the things that I also enjoy is cheesy grits.  Just cook a pot of grits--properly cooked they are not gritty--in chicken stock, if possible and then when done stir in grated cheddar cheese, a couple of ounces of cream cheese, and butter until everything is melted and well blended, and serve alongside some soft scrambled eggs; good for breakfast or anytime!

 

Edited to add that I usually add some Creole seasoning to mine along with a couple of dashes of hot sauce or Tabasco sauce and to make sure the stock is salty enough or if using plain water, make sure it's salted.
