@Sooner  We like a beef rib roast and have that every Christmas; it's just wonderful. Question...I couldn't locate the thread with your response about Not using a chuck roast (too fatty you thought) for beef soup. I have all the ingredients, but purchased a chuck roast for the soup. What cut of meat would you recommend for this soup?...Rump roast, maybe, or something else?

@FiddleDeeDee  We've purchased the beef tenderloin (pismo) from Costco and it's been fantastic every time. It's a tool up this year if I'll make that or a beef rib roast.

Let's just say the raw fish is an "acquired experience". It helps that my husband (when young) was a cook in an upscale restaurant. He still enjoys cooking and is relegated to stuffing the fish with herbs and lemon. I don't have a strong enough stomach, but once cooked it is delicious.

 

Don't let your family see it in its raw form! Suprise them at the table and enjoy!

FiddleDeeDee, (I love your nic, btw!)  Looks like you've been given some excellent alternatives. I will agree that a Prime Rib, Beef Tenderloin / Chateaubriand would be fantastic alternatives. I don't think you'll be disappointed with either of the choices. Enjoy!Heart

Yes, with all the suggestions, I developed the Christmas Day menu. Now to start making my list of everything I need, getting it home and checking Publix for the best Filet Mignon they sell, lol. Worried about ordering it due to shipping issues so, we'll see.

You could do tamales, a traditional Christmas food, or order dinner from a restaurant; check their menus and see what they are offering for take-out; most like rib roast or beef tenderloin

Brisket is also an option. I make it on Christmas or New Years day, to take a break from the turkey. My children just wanted turkey for every holiday. I was able to sneak this in, after awhile they expected it. 
I tried Rastelli's Beef Wellington and my husband and I didn't like it. My son and his wife did. I wouldn't recommend it. 
This year we had Corkys turkey and ham. They were both very good and simple.

Hi @Mimi 1883! I'm definitely not sooner, but wanted to say that in my opinion, a chuck roast is the perfect cut of beef for soup! Smiley Happy

@sabatini -  Thanks very much for your opinion. I've always used chuck in the past and thought the soup tuned out just fine - my husband (Very picky eater) absolutely Loves it. I am going to use the chuck roast I already have and make soup today. It's pretty cold here, so it will be a welcomed meal. Have a great day.
