I am a huge fan of beef but not prime rib.  To me, it is too fatty and I don't like the texture.

Give me a t-bone or Porterhouse any day or a good filet.  Serve with sauteed mushrooms and gravy/sauce with a splash of wine or cognac and a well-baked fluffy potato and a lot of salt and I'm in heaven.

I agree.  Too fatty and usually cooked too rare for me.  I like nice pink beef not bloody.  Filet Mignon is my favorite.

Re: Need help with Christmas Dinner....

This Christmas  for dinner we are having beef Wellington and my daughter is preparing at our house.  We just talked about that this week.  I ordered from QVC and they came yesterday so we are all set.

We are only having 4 adults and 2 kids.  No one else is coming and decided to play it safe.  So we are going to live it up with the food.

I am looking forward to it.  Place is all decorated, presents wrapped, food decided.  All I need is some snow.

Christmas is Always Lasagna.  By the time Christmas day is here I'm done with fancy feasts. I want something tasty and Simple.  A Lasagna can be meatless or meatfull.  Red sauce or White sauce.  Made up the day before and held in the fridge to pop in the oven Christmas day.  A salad and some garlic bread and it's Easily done.

How about spaghetti with meatballs/meat sauce, lasagna, fettucini, or manicotti? All would be great for Christmas dinner at my house, along with a salad and bread. Easy and delicious!

Re: Need help with Christmas Dinner....

We typically do a nice beef roast or prime rib with our families.  Since it's just my hubby and I this year, I'm thinking of doing a lasagna.  I can make it ahead of time and pop it in the oven that day.  Then as a treat I'll buy a dessert, maybe tiramisu Smiley Happy

I am not a fan of beef (except the occasional hamburger) but everyone I know that cooks beef seems to cook prime rib for the holidays.

We always have standing rib roast - I already purchased it and it's in the freezer!

Re: Need help with Christmas Dinner....

You have seafood on your menu but not fish. I like the drama of baking whole fish (branzini) in the oven.

Another suggestion would be to go veggie for one night--ravioli stuffed with butternut squash in sage brown butter.

@magicmoodzThe fish looks wonderful!  I had a little laugh though when you mentioned Drama.  It can see the Drama in My house starting with The raw Whole Fish on the counter instead of the Presentation at the table!     Now I want FISH!
