PIE CRUST
3 cups flour
1/8 cup sugar
1 teaspoon salt
1 cup (1/2 pound) cold butter
1/4 cup ice water

Heat oven to 400°F.
put one crust in the bottom of your pie plate, flute, set aside
Combine all filling ingredients except apples, 1 tablespoon butter and 1 teaspoon sugar in bowl. Add apples; toss lightly to coat.
Spoon apple mixture into prepared crust. Take your other crust, Fold into quarters. Place dough over filling; unfold. Trim, seal and crimp or flute edge. Cut 5 or 6 large slits in crust. Brush with melted 1 tablespoon butter; sprinkle with 1 teaspoon sugar. Cover edge of crust with 2-inch strip aluminum foil.
Bake 35 minutes; remove aluminum foil. Continue baking 10-20 minutes or until crust is lightly browned and juice begins to bubble through slits in crust. Cool pie 30 minutes; serve warm. Store refrigerated.

Grandma Ople's Apple Pie

"This was my grandmother's apple pie recipe. I have never seen another one quite like it. It will always be my favorite and has won me several first place prizes in local competitions. I hope it becomes one of your favorites as well!"
1 recipe pastry for a 9 inch double or a bought Pillsbury pie crust
Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer. Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

I'm a pie/baked goods snob and I bake a lot. My two very favorites are Grandma Ople's and Swedish apple pie that were reposted here by doglover3 from another thread about apple pie.

I found this recipe in a Taste of Home magazine and I make it all the time. It is excellent.

I made a "non-pie" apple pie the last time - only 2 of us. I think it's called a Gallette.
1/2 store bought pie crust, apple pie filling. Actually, my BF liked it - said it wasn't as "watery" as some apple pies.

CARAMEL TOPPING
1 cup sugar
2 tablespoons light corn syrup
1/2 cup whipping cream
2 ounces cold butter, diced

FILLING
1 tablespoon lemon juice
6 Granny Smith apples, peeled, cored and sliced
1/4 cup flour
1 1/4 cups sugar
1 tablespoon cinnamon

Pie Crust
1/4 cup butter
Caramel Topping
1 cup pecan halves

FILLING
Combine lemon juice, apples, flour, sugar and cinnamon in bowl. Mound filling over bottom crust prepared for filling. Dot with butter. Top with rolled top crust. Trim edges and fold under and crimp. Cut few slashes in top crust for ventilation. Bake at 325 degrees until crust is golden brown, 1 1/2 hours. Pour Caramel Topping over crust and cover with pecans. Place pie on foil-lined tray. Turn to oven to toast nuts 10 minutes.
PIE CRUST
Combine flour, sugar and salt. Cut in cold butter. Work dough with fingers or cutter to form coarse crumbs. Add ice water and mix lightly until stiff dough is formed. Refrigerate to chill dough. Divide dough in half. Roll out bottom crust and place over greased 9-inch pie pan, allowing edges to hang over slightly from rim. Roll out top crust and refrigerate until ready to use.
CARAMEL TOPPING
Combine sugar and corn syrup in saucepan. Stir constantly over high heat until mixture dissolves and turns rich caramel color. Remove from heat and slowly stir in whipping cream and butter until smooth.
Makes 8 servings.
Each serving contain about: 908 calores; 657 mg sodium; 114 mg cholesterol; 49 grams fat; 116 grams carbohydrates; 7 grams protein; 0.86 grams fiber.
