My dh wants me to make hamburger gravy tonight to put over mashed potatoes. It's been years, so I looked it up on line. Sounds like you can fry the meat, remove, then put flour, etc in the dripping, add milk, simmer. OR ~ you can add the flour, etc to the hamburger after it's cooked, then add milk and simmer. Also, the recipes I looked at called for canned milk. I've never done that. I have some, though. What is your favorite, please?

My mom made this stuff when we were kids growing up for a cheap way to put a meal on the table to feed 7 of us. My mom did use evaporated milk, for every can you use, you need to use as many cans of water. It's really rich tasting. Also put in lots of pepper. We always ate it over biscuits or toast. It's just like having sausage biscuits and gravy for Sunday morning breakfast. Definitely drain away the extra grease before stirring in flour as your thickener.

Years ago I used a recipe in my Betty Crocker Dinner for Two cookbook. It had 1/2 lb ground beef, and the gravy was made with 1/2 cup water/drained canned mushroom liquid and 1 beef bouillon cube, 1 T flour. This is a very similar recipe with 1 lb beef and 1 cup water for the gravy.

If using this recipe, and using canned mushrooms, I would suggest using the reserved mushroom liquid for part of the water. Since my old recipe used 1 beef bouillon cube for 1/2 cup water, I am wondering if this recipe with 1 cup water should have 2 bouillon cubes.
SALISBURY STEAK WITH MUSHROOM GRAVY
1 lb. ground round steak or ground beef
1/4 tsp. pepper
1 tsp. salt
2 tbsp. fat or vegetable oil
Mushroom gravy (below)
Combine meat, pepper and salt. Shape into 3 or 4 plump oval patties. Pan fry in hot fat in a skillet or broil 4-6 minutes on each side. Serve with mushroom gravy.
MUSHROOM GRAVY:
1/4 c. sliced mushrooms or 1 can mushrooms
2 tbsp. flour
1 c. water
1 beef bouillon cube
Remove meat patties to a warm plate. Pan fry mushrooms in drippings. Add flour to drippings in pan; stir. Add water and bouillon cube. Cook until mixture boils, cube is dissolved and sauce is thickened. Pour over patties. (2 generous servings.)

I make it the easy way. Brown hamburger, drain grease. I use hamburger from a local farmer so there's hardly any fat. I use McCormick's White gravy packet. Just add 2 cups water, bring to a boil, turn down & simmer until thick 5-7 mins. Add the gravy to the pan of hamburger. Put on toast, biscuits, sourdough bread etc. 1 pack of the McCormick's gravy is enough for 1 lb hamburger. McCormick's has a lot of different gravies if he does not care for the white.

Never heard of hamburger gravy, but it sounds like a milky version of the gravy they put over Salisbury steak.

This is how my parents fed us when we were kids....lots of kids on a poor teacher's salary.
Brown the hamburger. Drain the grease (they didn't in the old days). Set aside the meat. Make a roux....how much depends on how much gravy you're making. Once it's as thick and as much as you want, add the meat. Salt, pepper.
Hamburger gravy is a feel-good food in my book.

Always called SOS in our family! Never added a beef bouillon cube to the mix but I'm sure it adds great flavor! I also add extra black pepper! We usually have it over toast or biscuits. Great comfort food!

My mother used to do this same thing with shredded corned beef from those little packages. But, my favorite was the hamburger version. I guess all the military guys came home from the war and wanted their SOS, or at least I always thought that is how it got started????I looked forward to SOS nights. (sometimes she added a teensy bit of curry powder to the recipe for a change.) And it was served on toast. A cheap meal for sure back then.

Yes, cheap, but oh, soooooo good. We had this for weekend breakfasts. After my son married, he asked his wife to make it for him.
