Need a meal idea

My boss from a different division is in town for over a week. I was thinking of having him down to the lake for dinner one night over the weekend with my family. My problem is I have no idea what to cook. I am not great with a grill and am limited with no power. We have a gas fridge and stove. Would like something easy, yet good?
