Ruts are hard and families get used to menus and obviously they have made their votes.

 

A few times I decided that none of the above are being served this week.  Stumbled onto new faves.

@LizzieInSRQ  It's a pasta dish - a variation on mac and cheese.

1. Cook a box of pasta according to the package directions. Drain, return to the pot and set aside.

2. Dice about 5 strips of bacon and sauté in a frying pan until almost crisp.
3. Chop a medium onion and add to the bacon, cooking until the bacon's crisp and the onion's clear.

4. Stir the bacon and onion into the pasta.

5. Add a 15 ounce can of diced tomatoes.

6. Add about 1 to 1.5 cups of shredded cheddar cheese. Stir well to combine all ingredients.

7. Turn into a baking dish (smaller than 9x13) and sprinkle with about 1 cup of shredded cheddar cheese.

8. Bake in a 375 degree oven until the cheese on top has melted and is golden brown, about 25 minutes.

 

This seems like a lot of prep, but the actual prep (chopping bacon and onions) only takes about 5 minutes or so. I use a bag of Kraft shredded cheddar cheese, so that doesn't take any time at all. This recipe feeds our family of 3 with a little left over for lunch the next day. Hope you like it!

Baked chicken thighs, meatloaf, rib eye steak, breaded pork chops, boneless pork chops, sausage peppers and onions, baked cod, shrimp scampi. Sides could be broccoli, cauliflower, asparagus, green beans, or brussel sprouts. Mashed potatoes, rice pilaf, baked potatoes, homemade vegetable beef soup, Italian wedding soup. Pasta with meatballs and sausage.

One dish...chicken, red potatoes and green beans..easy!

drizzle with olive oil then Dry Italian seasoning, cover, bake 1 hour..350

 

Pronto Chicken...dip breasts in Italian dressing, then

bread crumbs and bake...cover 1/2 hour, uncover 1/2 hr. at

350

 

Meatloaf/baked potatoes or mashed, side veg 

 

Pasta....w/meatballs or w/o, shrimp scampi/angel hair

(I make meatballs ahead of time and freeze them.  For quick meal, jar of sauce and take out few meatballs..done.)

 

Chicken Piccata and Spanish Rice

 

Soup and Sandwiches or Hearty Soup/Rolls

 

Beef Chili or White Chili (chicken)

 

Chicken Pot Pie or Shepherd's Pie

@Eileen in Virginia thank you for not only clarifying but taking time out to write up the recipe! Sounds scrumptious and one of those "hit the spot" dinners!

 

I love pasta but I can't have it right now so I think I'll sub with a combo of rotisserie chicken and blanched cauliflower! Thanks for the inspiration!

Martha Stewart Pan Roasted Chicken with Za'atar Potatoes and Kale sheet pan dinner.

 

Zakarian Cavatappi Pasta Sausage Kale Mushrooms 

 

Blue Jean Chef Lemon Chicken Spinach and Orzo Dinner

 

Katie Lee Roast Chicken Breast with Polenta & Tomatoes.

 

Every one of the above one pan / skillet dishes are delicious. 

 

Seared in 1/2 butter 1/2 olive oil to raise the smoke point of the oils sear 3 mins ea side beef filet 5 oz with rosemary in the pan.  Take out steak to rest and in the juices saute sliced mushrooms red wine garlic butter.   10 minutes & delicious.

 

I make cole slaw with caraway seeds, celery seeds etc, can be bought too, to top rolls Jack Daniels whiskey pulled pork on rolls.

 

Bacon & egg sandwiches on toasted sourdough.

 

Salmon 6 oz topped with Italian balsamic marinade, capers, thinly sliced meyer lemons when available sprinkled with dried dill.  Squeeze more of lemon when done.  350 degrees for 14 1/2 mins.

 

Prime Rib on the indoor rotisserie rubbed with a local prime rib rub spice.  Leftovers make delicious beef & barley soup and thinly sliced beef au jus dip sandwiches. 

 

A lot of our meals are based on what is on sale.  Made a prime rib recently, it was $6.99 / lb on sale.

 

These recipes are generally our rotation, needing to try some new ones too Smiley Happy

@JeanLouiseFinch  I try to cook (and eat) like you. Here's my problem, I don't like and I can't eat salad. I really wish I could, but it's just not something I can get down. I agree about the carbs, processed food, and excessive salt out of our diet. Unfortunately, I'm a picky eater, so it makes it hard to be creative. I like your ideas though. Good incentives!
