Need Recipe for Walnut Squares

My mother used to make these and I lost the recipe.  It's the texture of a brownie but has brown sugar in it, not chocolate.  It's very easy to make, just a few ingredients, and baked in an 8-inch square pan.  Searched for it online and wasn't able to find one that sounded right.  TIA

OLD FASHION BROWN SUGAR CANDY

 
Whenever I think about brown sugar candy I think about one of my favorite uncles.  He has been gone for years and I seldom saw him the last 20 or 30 years of his life.  He loved brown sugar fudge so anytime I make brown sugar candy I am reminded of him.  Sometimes I wonder what is better, the candy or the memories.

3/4 cup butter
3 cups packed light brown sugar
1 can (5-oz) evaporated milk
1 tsp vanilla extract
1 lb powdered sugar
1/2 cup chopped black walnuts*

Butter a 9-inch square pan or dish; set aside.

In a heavy saucepan bring the butter, brown sugar, and milk to a boil.  Cook over medium-low heat for 5 minutes, stirring often.  Remove from the heat and add the vanilla extract, powdered sugar, and walnuts.  Beat the mixture just until it begins to thicken.  Pour candy into the prepared pan or dish.  Let stand until cool; this candy sets-up quickly.  Cut into 36 squares and place on plate, in a candy dish or may be kept in an airtight container.

*If you do not have black walnuts or just don't like them, substitute English walnuts.

Brown Sugar Fudge
 

Yield: 36 pieces

 

Brown Sugar Fudge

An old-fashioned fudge recipe with the flavor of caramel and a little crunch of toasted walnuts.

Ingredients

  • 1/2 cup + 2 tablespoons (150 ml) evaporated milk
  • 2 cups (425 grams) brown sugar
  • 3/4 cup (170 grams) unsalted butter, cut into cubes
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cup (198 grams) powdered sugar, sifted
  • 3/4 cup (85 grams) toasted walnuts, chopped (optional)

Instructions

  1. Combine the evaporated milk, brown sugar, butter, and salt in a heavy-bottomed medium saucepan. Place over medium heat and bring to a boil, stirring until smooth. Continue to simmer, stirring frequently, until a candy thermometer reaches 238°F.
  2. Remove from heat and pour into a heat-proof bowl. Add the vanilla and combine with a hand-held mixer. Add the powdered sugar in small additions while continuing to beat with the mixer. Mix until smooth. Add the walnuts and mix until just combined.
  3. Spread the fudge into an ungreased 8-inch square pan. Chill in the fridge for 30 minutes or until firm. Slice with a sharp knife. Store fudge in an air-tight container for several days.

Ingredients
  • Ingredients:
  • 1 cups ‑1/2 white granulated sugar
  • 1 cups ‑1/2 whipping cream
  • 3/4 cup packed brown sugar
  • 1 1/4 tablespoon light corn syrup
  • 1/4 cup real unsalted butter + a few tablespoon
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped walnuts optional
Instructions
  1. Butter an 8x8 square pan. Then butter the sides of a heavy large saucepan. Add cream, both sugars and corn syrup in the buttered saucepan. Heat over medium, stirring contsantly until sugar dissolves and comes to a boil. Add candy thermometer. Cook over medium heat until mixture reaches soft ball stage (238°F).
  2. While that is cooking slice your butter into thin slices. Once the mixture reaches the soft ball stage take pot off of heat. Add sliced of butter on top of hot mixture and do not stir.
  3. Let sit for 10 minutes. Then add in white chocolate chips and nuts (optional). Mix together until white chocolate is melted and mixture is nice, thick and smooth. Pour mixture into 8 inch pan. Cool in refrigerator until firm. Slice into cubes and enjoy. Store in refrigerator.

I can’t help but wonder if you are thinking about Blonde Brownies.  Here is a wonderful family recipe – see if it might be close.

 

Frosted Blonde Brownies

 

Instructions:

 

Cream:

 ½ Cup butter

2 cups light brown sugar

2 eggs

 

Add:

2 cups flour

2 tsp. baking powder

½ tsp. salt

2 tsp. vanilla

1 ½ cups chopped walnuts

 

Bake in slightly greased  pan @ 350 for 23-27 minutes (should be soft)

 

Icing

Combine:

¼ cup browned butter

2 cups powdered sugar

2 Tbls. Cream

2 tsp. vanilla

 

Frost them right in the pan (brownies should be fully cooled first).

MAPLE WALNUT BLONDIES
 
Yield: 12 blondies
 
INGREDIENTS
  • ½ cup rolled oats
  • 6 tablespoons butter, melted
  • ¾ cup brown sugar
  • ½ cup maple syrup
  • 1 teaspoon vanilla
  • 1 egg
  • 1 generous pinch of salt
  • 1 cup flour
  • 1 c chopped walnuts

INSTRUCTIONS

Preheat oven to 350 degrees. Grease an 8x8-inch pan and line with parchment paper.

 

Set aside.

 

Place the oats in a food processor and pulse until coarsely ground. Set aside.

 

In a large bowl, whisk together the butter and brown sugar until slightly lightened in color. Add in the syrup, egg, and vanilla, and whisk until thoroughly combined.

 

Using a spatula, stir in the ground oats, flour, and salt until just combined. Fold in the walnuts. Pour batter into the prepared pan, spreading evenly.

 

Bake for 30-35 minutes, until the edges are golden and the center is set. 


Allow to cool in the pan, then use the parchment paper to lift the blondies out the pan.

 

Cut into pieces and serve. Store in an airtight container for up to 4 days.

 I searched for  Old fashioned walnut squares and this came up:
 
Yield 16 squares Units US
 
Directions
  1. Preheat oven to 325 degrees, grease well an 8" square pan.
  2. Beat egg until foamy, beat in brown sugar and vanilla.
  3. Sift together dry ingredients, mix into to egg mixture, stir in walnuts.
  4. Bake until the top has a dull crust about 25 minutes, cut into squares while warm, cool and then remove from the pan.
  5. Easily doubled, bake in a 9x13 pan
