A friend of ours recently baked a Coke Cake and it was so good. Does anyone have a tried & true recipe for this cake?

Funny this should come up as I make it all the time for parties and just wrote it out to send to people who wanted the recipe.

Coca Cola Cake

Bake at 350 for 50 minutes (this varies so check sooner)

Makes one 13x9x2 inch cake

2 cups all purpose flour

1 teaspoon baking soda

2 cups sugar

½ cup (1 stick) butter

1 ½ cups miniature marshmallows

3 tablespoons unsweetened cocoa powder

1 cup Coca Cola (the regular one with sugar and caffeine)

2 eggs

½ cup buttermilk

1 teaspoon vanilla

Grease and flour a 13x9x2 inch baking pan. Put flour and soda into a large bowl, stir, add sugar and stir again.

Meanwhile, heat butter, marshmallows, cocoa and Coca Cola slowly in a medium sized pan stirring constantly until everything is melted. Do not allow to boil! Pour over flour mixture and beat well to blend.

Beat eggs in a small bowl until light and fluffy; stir in buttermilk and vanilla, beat this mixture and then pour into the other batter. Beat until well mixed and smooth (batter will be thin). Pour into prepared pan.

Bake until center springs back when lightly pressed with fingertip. Frost cake right away with the cola icing. Let sit overnight uncovered until fudge icing is set.

Icing recipe

Combine 1 stick of butter, 6 tablespoons Coca Cola and 3 tablespoons unsweetened cocoa powder in a small saucepan. Heat to boiling, stirring constantly, remove pan from heat and stir in one package of 10x confectioners’ sugar and I teaspoon vanilla. Beat until smooth and pour over hot cake. Pour a little at a time as it’s runny.
