NEED ADVICE ON COOKIE RECIPE SUBSTITUTIONS

My sister emailed me a recipe for Pumpkin Molasses Cookies because she knew I loved pumpkin so I made them & liked them but the pumpkin taste was not as pronounced as I would have liked, they tasted more like spice cookies. I decided that it was the spice mixture that needed changing. The original recipe called for 2 tsp. of cinnamon & 2 tsp. ground ginger & I want to substitute pumpkin pie spice. I think 4 tsp. of it would be too much but I'm not sure if I should use 2 tsp. of the pumpkin pie spice & maybe 1 tsp. of cinnamon. The thing I'm not sure of is do I need to replace the entire 4 teaspoons of spice? I would appreciate your opinions as to how to proceed with this one. Thanks everyone.

I don't know what kind of Pumpkin Pie Spice you have. I have Penzey's and it has cinnamon and ginger already in it. They suggest using 1/2 t. per cup of batter. Don't know if you mind tasting raw batter, but that is a way too, to taste if the seasoning seems right to you before baking. (not everyone feels safe about raw batter)

Also, most recipes I see have 1 1/2 t. - 2 t. cinn. and maybe 1/2 t. nutmeg. That is for recipes with 1 cup pumpkin and 2 - 2 1/2 cups flour. So 4 t. of spice could be a bit more than most have, unless your recipe is for a larger amount of batter.

What I would do is use the already spiced canned pumpkin and omit any spices and you should get a more pumpkin taste. I always do this with recipes.

I laughed out loud when I read the part about tasting raw batter because I have never in my life (with 1 exception) made a cake, cookie, etc. recipe that I didn't taste batter, so no I don't mind tasting it. I looked through the whole recipe & it does not give the amount it makes & I really don't remember but it has 1/2 c. butter, 1/2 c. white sugar, 1/2 c. brown sugar, 1 egg, 1/4 c. molasses, 1/2 c. canned pumpkin, 2 tsp. vanilla, 2 1/3 c. flour, 2 tsp. baking soda, 1 tsp. baking powder, 1/2 tsp. salt, 2 tsp. cinnamon, 2 tsp. ground ginger. I'm wondering about trying 2 tsp. pumpkin pie spice & maybe 1 tsp. of cinnamon?

Well, you never know...there is always someone waiting to jump on peoples comments. So, I had to back myself up and say I am not out to make someone sick from eating raw eggs {#emotions_dlg.biggrin}. I would check your P.P. spice and see if it has cinnamon in it (most likely does), so I don't know if "I" would add another t. on top of that. A lot of the ones I saw have about the same amount of ingredients as your recipe, but 1/2 c. more pumpkin and less spice. If you want to taste it, I would add a smaller amount first, you can always add more if it needs more of a cinnamon flavor. Good luck! Sounds yummy!

I made a pumpkin pound cake yesterday so as soon as that's gone I am going to try this with 2 tsp. pumpkin pie spice & then taste it & see & I agree that since there is cinnamon in it I do not need to add more. Well here's the update. I put 2 1/2 tsp. of pumpkin pie spice in & I like the way the dough tastes. The cinnamon & ginger which what was called for originally seemed to enhance the molasses in the recipe & now with the pumpkin pie spice it isn't as pronounced. The dough is chilling in the fridge. You are supposed to drop spoonfuls of dough into sugar before you bake it & I toyed with the idea of adding pumpkin pie spice to the sugar but I think that might be too much so I'm going with plain sugar.
