I was in the mood for chili for supper - but had no ground beef in the fridge and wasn't in the mood to go shopping.

 

I had a can of corned beef in the cabinet .... and figured "why not."  Beef is beef.

 

Anyway - "corned beef chili w/beans" turned out really good.   I may continue with this recipe!

We had chili tonight. There's enough for tomorrow too. Ours has ground beef in it. The version I make has lots of tomato juice, kidney beans and noodles in it.

I often use bulk Italian sausage in lieu of hamburger meat.

Don't you love it when a "make do" turns out really super and you enjoy it! 

I've combined a few things out of necessity that I continued.   A new recipe is born!

@ALRATIBA I always use ground chuck and plenty of beans.my canned tomatoes gets poured in plus 1 can of beer.so darn yummy!

Johnsonville makes a sweet and a hot sausge and it works great for chili or spahetti. I also use chicken, cubed, rolled in flour that is spiced w/ chili powder, cumin, salt and pepper. I cook the chicken first then throw it in.

 

Also, if you're in a hurry and want chili, I've used my favorite fresh salsa, throw in your spices, black beans and meat. Great tasting chili in 30 minutes or less  and no chopping of anything.
