My Best Curried Vegetable Stew Ever!

I usually use lamb ... but the supermarket didn't have what I wanted so I bought some stir-fry beef.

 

I don't measure ... just add until it looks about right.

 

White potatoes, sweet potatoes, carrots, onions, garlic, Israeli couscous (thickener), crushed tomatoes, black beans, vegetable broth, balsamic vinegar,  curry spices.

Post a good recipe for me.  I have eaten curry and would like to try it again.  Just a simple recipe, nothing complicated that serves 8!  LOL

I love curry!  This recipe sounds so good and I would try (without the meat) and, maybe add a can of coconut milk.....yum!  Thanks for the inspirational post and enjoy your stew!
