I think this may have been one of the Galloping Gourmet's recipes from back in the day; therefore, it's from memory ;-D .

MOZZARELLA CHICKEN

Ingredients: 6 (medium-sized) boneless, skinless chicken breasts. (Or, thighs can be substituted if you prefer.)

1 large can stewed tomatoes (don't drain the juice)

1 green pepper (sliced into strips)

1 onion (sliced into rings)

1 can mushrooms, drained (or fresh if you prefer)

6 slices mozzarella cheese

Salt, pepper to taste.

Parsley or crushed basil leaves.

Directions:

MELT some butter in a large skillet.

BROWN chicken breasts.

Reduce heat.

POUR tomatoes with juice over chicken.

PLACE green peppers, onions, and mushrooms evenly over chicken.

ADD parsley or crushed basil leaves.

COVER skillet, and simmer on low until chicken is cooked through.

PLACE mozzarella cheese slices over chicken and vegetables, and heat a bit longer until cheese is melted.

SERVE with mashed potatoes or rice. I serve this in the skillet at the table, but it can be presented nicely on a platter with the vegetables and juice in a bowl.
