I'm sure you've seen this recipe before because it's from Mary Beth Roe. I know it's not really pumpkin-pie time, but my family thinks otherwise.

PUMPKIN IMPOSSIBLE PIE

Use a non-stick pie pan.

Preheat oven to 350

½ C. baking mix (Bisquick®)

4 eggs

1- 15 oz. can pumpkin (100% pumpkin; not pumpkin pie mix)

½ t, cinnamon

1 t, ginger

1 t. nutmeg

2 C. milk

¾ C. sugar

COMBINE all ingredients in a blender, and blend for 3 minutes, or use an electric mixer on high. POUR into greased and floured pie pan, and BAKE for 1 hour at 350. COOL and refridgerate. SERVE with your favorite whipped topping.
