All Recipes dot com sent me some more egg recipes today!

They all sound delicious ....#1 Egg Curry is going to be tomorrow's dinner!

One egg dish not on the menu was a favorite at our house growing up with meatless Fridays:

Potato pancakes, fried eggs and applesauce! My brother and I (both in our 70s) are still making it just like "mother used to make."

Just want to report back on the Egg Curry ..... absolutely delicious just as I expected. Early supper after late breakfast and no lunch!

When the eggs were boiled, I started the curry ... Only prep was slicing the onion and later peeling the eggs. I used the wide cut on the mandarin slicer so there were good size onion pieces.

I didn't have garlic paste or ginger past - so I substitued diced garlic and powered ginger and then used a lot of curry power an garam masala instead of the other spiced mentioned .... my usual curry mixture. (I ordered the garlic and the ginger pastes from Amazon ... so next time ...)

Served with wilted spinach salad (spinach, beets and feta cheese). I made enough for leftovers so I can eat this again tomorrow ... I bought some paan today ... will have some of that with tomorrow's supper.
