My hairdresser and I got silly over this recipe. One of her other clients baked her a batch and she was sharing them. So we all wanted the recipe. When we were reading the recipe, my hairdresaer mentioned that there was no flour in it, so we talked about how 'healthy' this recipe was with no flour, and things got worse from there with a lot of silly women with the giggles. Anyway, the important thing is how delicious these calorie-laden cookies actually are. One really is more than enough to satisfy. I think these are a 'grandkids' special, too. (I have an old version, as some of you probably do, too, of a very similar recipe which is about 4 x larger and includes Karo syrup.)
Monster Cookies
3 eggs
1 1/4 c packed light brown sugar
1 c granulated sugar
1/2 t salt
1/2 t vanilla extract
1 12-oz jar creamy peanut butter
1 stick butter, softened
1/2 c multi-colored chocolate candies, M&M's of course
1/2 c chocolate chips
1/4 c raisins, optional
2 t baking soda
4 1/2 c quick-cooking oatmeal, not instant
Preheat the oven to 350 deg F.
Line cookie sheets with parchment paper or nonstick baking mats.
In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the chocolate candies, chocolate chips, raisins, if using, baking soda, and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets.
Bake for 8 to 10 minutes. Do not over bake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags. 3 dozen
