Now that my mom is gone, I'm craving some special, but easy dishes she made before the dementia took its hold,  That being said, I have no recipes, just memeories. One such, is her summer casserole.

 

 You need tomatoes from the vine, fresh garlic, nice white potatoes,a vidalia onion and an eggplant..

 

Chop all them up in chunk sized pieces, except the garlic, you can use a press or throw in whole cloves.  Mix it all with oilive oil, salt, pepper, red pepper and sprinkle a little rosemary on top . Arrange in a clear pyrex dish and bake at 350 until the veggies are fork ready, maybe 45 minutes. remove from overn and sprinkle a layer of fresh grated cheese, mozzarella is best, and cover with foil and bake for 15 more minutes.

 

You of course, can add or subtract veggies for taste.  But it is yummy and reminds me of my mommy .Heart

This sounds good! Does the eggplant need any special prep? I don't do much with eggplant.

Your mom's recepie sounds good, I like all her ingredientsSmiley Happy. I miss my mom behind words...she made the most delicious pierogi...I've made them many times since (very laborious), but in no way domtheyneven taste close to hers...the potato with farmers cheese and onion were my favorite as well as my family's.  Pierogi are Filled dumplings of East European origin.  Sooo good😋

@novamc1...I'm not too bad of a typist (should proof read more) .. It's the darn self correct..
