This recipe was published in the Mpls. Star Tribune many years ago. It was served at the Minnesota Arboretum Tea Room at that time. The recipe was requested by a visitor from Missouri. It is delicious and easy to prepare.
Minnesota Arboretum Raspberry Mile High Pie
1 cup sugar
1 cup fresh raspberries or frozen raspberries, thawed
2 egg whites
2 to 3 drops red food coloring, if desired
Pinch of salt
1 cup whipping cream, whipped
9" baked pie shell
Whipped cream and berries for garnish
Beat the sugar, raspberries, egg whites, food coloring and salt together until very stiff. Fold in whipped cream. Turn mixture into baked pie shell; freeze. Keep frozen until ready to serve.
To serve, cut in 6 to 8 wedges. Garnish each wedge with 1 tbsp. whipped cream and during raspberry season, 2 or 3 fresh raspberries.
