Miniature Crustless Quiche

4 large eggs

1/4 cup milk

1/4 cup onions, chopped

1/4 cup red peppers, diced

1/4 cup musrooms, diced

1 tbsp. olive oil

1/2 cup cooked ham, diced (I'd rather use bacon)

1/2 cup grated cheddar cheese

1 tsp. flour

salt & pepper

Saute the onions, red peppers, and mushrooms in the olive oil and set aside. Whisk together the eggs, milk, ham, cheese, flour, salt, and pepper. Grease a muffin tin (or line with paper cupcake liners), and add vegetables to the bottom, dividing equally. Add the egg mixture on top, again dividing equally. Bake at 350 for about 20 minutes until firm and slightly puffy.
