This recipe was given to me by a family member.  I was skeptical before trying it.  I'm a believer now.  Woman Happy

 

Microwave Potato Chips

1 scrubbed Yukon Gold or Russet potato
½ - 1 Tablespoon oil
salt & pepper to taste

Slice potato with 1/16” mandoline blade or a vegetable peeler, to get the thinnest slices you can.

 

Cut parchment paper the maximum size of your microwave; brush paper lightly with oil (start with ½ Tablespoon).

 

Put potato slices single-layer on paper, sprinkle with salt (& pepper, if using).

 

Microwave about 3, depending on your machine possibly up to 4 - 4.5, minutes.  They should get light brown, but won’t crisp fully until they cool.

 

Mrs. G.'s notes:  I believe the vegetable peeler gives thinner slices.

 

Before putting onto the oiled parchment paper, I blotted the potato slices dry on both sides.  I also turned each slice on the paper, to coat both sides lightly (which might mean using just a tad more oil, but be careful not to overdo.)

 

Canola oil is the typical oil used for frying potato chips.  I used olive oil, and was pleased with the result.

Interesting!!!  Do you suppose this method would work with sweet potatoes? Thanks for sharing this info.

@vabreeze  I said the same thing to DH.  It might be more difficult to get as thin a slice, but it would be worth trying.  I've got a little brown sugar and cinnamon in mind as a sprinkling  over top.

I wonder if you could just give them a small spritz of Pam?  That the way I do grilled cheese sandwiches, just a spritz of butter flavored Pam.  I love the way they toast and their texture.  Close to 0 calories too.

I may try this tomorrow-- if so, I'll let you know how they turn out.

@Tinkrbl44   I'm not a big microwave user, so am not sure how wax paper does in one. First, the wax might melt, then there might be an issue how the oil reacts to or on the wax.  Why not test with a small potato and come back and let us know?

What temp?  Did you do them on high?  What is high on your microwave?

My best answer to either of your questions is to try the recipe with a small potato and see how you like the result.

 

I am not a big microwave user.  The one I have was from the previous owner.  I suppose it's set on high, but have no idea how hot that is.
